All you need is Salmon!
As much as I respect tradition, I like bringing my flavor to it to make it my own. Something that's my creation. Especially when it comes to food. If you know me close enough you know that I truly enjoy preparing a meal according to what is my whim of the moment. These are the moments where the food artist in me comes alive and recipes are out the window for good reason. My recent muse is Salmon.
You see, growing up along the western coast of India, fresh fish for lunch almost daily from a fish market or the fishmonger by my house was my staple. After I moved to Oman - it was the same but a little different. I thoroughly enjoyed my Saturday mornings driving in my Duster with my parents to the fish market. We'd have a look at the variety of catches the Arabians made and choose a couple of them for us for the week. On returning, we'd make packages depending on how much would be consumed each day and put it in the freezer.
Then came Poland. Fresh fish is definitely available given that the rivers run all through the country, but in the city, there weren't many options for a fresh fish facility. If there is, it's probably in someplace I haven't gotten to yet. Frozen fish from supermarkets? - I wasn't so into that. Leave alone the smoked, marinated versions! Good heavens- I crave it fresh!
However, a month ago at the usual supermarket where I do my groceries while strolling along the aisle in the meat section wondering - what should I buy... what should I buy that is healthy, nutritious yet delicious and would make me feel full....I came across these lovely cold pieces of salmon unsmoked, un marinated. There was my muse! The delicate and beautiful salmon. Not such a fan of the colour but definitely a huge fan of the fish.
So after a day's work, I usually want to cook something quick and delicious. Yesterday's whim got me around tossing salmon and cherry tomatoes in their juice of lusciousness.
How do you make this appetizing flavourful bowl? Here's what you need:
- place the potatoes in boiling water in a pot for 12 minutes.
- simultaneously, toss in the cherry tomatoes and oil in a pan, cover the pan and let it simmer on medium heat for 5 minutes
- add salmon to the pan with tomatoes. Feel generous with the pepper but hold the salt to a little sprinkle like a little bit of fairy dust, cover the pan
- 8 minutes later - voila! It's done.
Serve in a bowl and be amazed as the flavors burst in your mouth!

I also like salmon :) I think Poland has some problem with fish. Even on the polish seaside the fish dishes in restaurants are often made from frozen fish.
