Black Beans Broccoli curry

Black Beans Broccoli curry

Ready in 20 minutes

Serves 2 people

Vegan


Ingredients

  • 3 Tbsp oil 

  • 1 finely chopped onion 

  • 5 cloves of garlic mashed under a knife 

  • Spices (homemade indian spices mix, freshly ground black pepper)

  • 5 Tbsp  tomato pulp 

  • 100-200gms tin of black beans 

  • 2 handfuls of red lentils

  • 1 flat tsp salt

  • 2 cups of freshly cut broccoli 

  • 1 cup mixed quinoa 

  • 1 cup basmati rice 


Preparation

  1. Heat the oil in a large pan with medium heat 

  2. Fry the onions until they are transparent and add the garlic and tomato pulp

  3. Put in the spices and mix evenly. 

  4. Add in the black beans with juice and red lentils. Stir to combine. 

  5. Mix well. Let it simmer for 10 minutes on medium heat under a closed lid. 

  6. Sprinkle salt and mix. Toss in the broccoli and close the lid for 3-4 minutes. 


Steamed Rice & Quinoa

Cook the rice in boiled water for 11 minutes. Add the quinoa on the 3rd minute. 

Add 2 tsp pf salt, stir well and drain the water carefully so as not to lose the quinoa. 


Serve in a bowl with rice & quinoa on one side with the beans curry 

Tips

Do not mix the broccoli with the curry. 

Let it stay on top and be steamed.
